Description

The loaf looks uncomplicated. Flour and liquid become a round, and heat turns the outside brown while the centre sets. Damper rewards a baker who can work with what is available, whether that is a domestic oven or a camp oven beside a fire. Its apparent simplicity makes the work before the dough especially easy to overlook.

A modern oven damper with roasted, food-grade wattleseed, gently gathered and baked as one round. Makes 1 round, about 850 g dough, 8 portions.

Recipe
Preparation
1
Heat the oven to 210 °C conventional. Line a tray. Mix the flour, baking powder, salt and wattleseed thoroughly.
Mixing and kneading
1
Add oil and 300 g milk. Mix to a soft dough, adding a little more milk only if dry flour remains. Bring together with a few gentle folds, without a long knead.
Shaping and layering
1
Shape a round about 18 cm wide and 4 cm deep. Set on the tray, cut a cross about 1 cm deep and brush lightly with milk.
Cooking
1
Bake 30–40 minutes. Check the colour after 20 minutes and shield if needed. The base should be browned and the centre set, around 96 °C if checked with a probe. Give it further time if still doughy.
Cooling and serving
1
Cool on a rack for 15–20 minutes, then break into pieces and serve warm.
Notes

About 1 hour. Bowl and baking tray. Contains wheat and milk.

Finding the ingredient

Buy roasted, ground wattleseed sold for food. Do not substitute seeds collected from an unidentified acacia. For a plain wheat damper, omit the wattleseed and use the same dough cues.
